    Slow Cooker Recipes



    This is the time of year I usually dig out the slow cooker... recipes anyone?


    I will try and post something here in the next few days - did not bring my recipe books to work LOL!

    one of my FAVORITE soups.... my kids love it, so that is always a plus




    taco soup




    1 can of pinto beans (i usually skip this because i dont like 'em)

    1 can of corn - with the 'juice'

    1 can of rotel tomatoes and chilies

    1 can of whole tomatoes with juice

    1 packet of taco seasoning

    1 packet of dry hidden valley ranch dressing mix

    2 lbs of ground beef (you can use boneless chicken breasts also, just toss them on the top)




    brown your beef then throw it in the crock pot. throw the aboveingredients in the crock pot.

    let it cook on low for 4-6 hours




    after putting it in your bowl, top with sour cream, shredded cheese and eat it using tortilla chips. YUMMY

    iusuallydouble this recipe because its sooooo good the next day as well, after all the flavors meld.

    I'm a huge fan of overnight pit BBQ'd pork shoulder for pulled pork on a bun sandwiches (topped off with crunchy coleslaw and Louisiana hot sauce)! But my BBQ grille isn't made for overnight cooking and/or smoking. So my wife came across a very simple recipe for making pulled pork with BBQ sauce and onions in a slow cooker - and while it may not be pit BBQ.... it is damn sure a close second! [H]

    Enjoy! The leftovers nuke up nicely for a few days worth of sandwiches - 'pending on size of household.

    Here's some chili I made yesterday turned out pretty good:




    2lb ground beef (90/10)

    1/2 lb jimmy dean hot sausage

    1 large onion

    3 jalapenos

    1 bell pepper

    28oz can of diced tomatos

    15oz can of tomato paste

    1 can old el paso hot red enchilada sauce

    1 container hot bueno green chile (frozen aisle)

    Garlic powder

    Chili powder

    Cumin

    Pepper

    Kosher Salt

    Red pepper flakes for additional spice




    Start browning meat. Chop onion, bell pepper and jalapenos. Put all the chopped vegetables in the crockpot, add the can of tomatoes and enchilada sauce and green chlie. When the meat is nearly finished cooking (still slightly pink) add the tomato paste to the meat and mix it in until it's fairly consistent. Add meat mixture to crockpot. Unfortunately I don't really measure my spices so add the spice to taste. Let it cook on low for 6 - 8 hours or so. I started with a moderate amount of spice so I checked on it every other hour or so and added where I thought it needed it.
