I'm starting to dabble in creating my own wing recipes. Just curious what some other people use for bases. Right now I just do something that is along the lines of a hot sauce. Anyone create their own buffalo sauces/honey barbeque/hot sauce/other?
i use Franks Red Hot and butter.
then i always add more hot sauce for mine, cause i love 'em hot!
im curious to see what others use.

And like Laura, I use Sriracha, butter, and black pepper.
I am planning a garden this summer (I have a thread up here about it) and plan on growing some really hot peppers (Ghost pepper and Trinidad Scorpion anda few others) to make hot sauce with. That sauce is going to be a BLAZING!!!!!

Sorry I don't have the recipe, I was looking for it. I like a honey chipotle sauce. It's a combination of butter, honey, lemon juice,chipotle powder, and soy sauce with a bit of corn starch. Sorry again about not being able to find the actual recipe but hopefully this will give you some inspiration :D

@916 - thanks for the recipe I'll have to try that one.
My recipe has: Red wine vinegar, ketchup, dijon mustard, honey, salt/pepper, lemon juice and depending on heat, the pepper of choice. I normally go with some serrano and a couple habaneros. Sorry I can't tell you the correct measurements. I normally just add until I like the taste. Then I heat it to a boil and then simmer it for about 20 minutes.

Yeah, cosign on the Franks 'n butter, that is the OG Buffalo, NY recipe.
My personal at-home is Stubb's Wicked Chicken Wing Sauce mixed with cheapo BBQ sauce. The Stubb's by itself was so flippin hot that I could barely finish 6 wings on my own, so I had to start diluting it. Even then it gets almost unbearable after 5 or 6. I'm still curious as to how hot the Inferno variety of Stubbs is.

I think frying them on the grill if at all possible is the best way. They get that awesome bit of char and bit of smokiness.

baked is ok, but i like the cripsy-ness-er i get from the oil.

For me, it's a toss-up for fried orgrilled.But, here lately, I've been doing grilled a lot b/c of the weather. My new simple experiment is a sweet mustard sauce. I got burned out on regular hot sauces and wanted something sweeter. And, since my culinary skills are quite limited, I just mixed about 1 cup of standard yellow mustard and 2 cups of brown sugar. On the grill, it makes one hell of a tasty glaze.

I was a deep fry guy until I had them smoked. Next time I make them I am going to smoke them and then give them a fast dip in the deep frier to crisp up the skin.

That sounds awesome! I hate to say it but I hope you have off on Friday so I get your feedback on that recipe.

Yeah i thought i was pretty macho with the hot shit. I have many kinda of hot sauce and alot of them are habanero with capsicum extracts. The ghost is on a whole different level, one little taste and my stomach was messed up for about a day and it felt like i was eating hot magama....approach with caution!

What I use for making hot wings:
<span style="font-size: medium;">Prep. Time:>
1:45
<span style="font-size: medium;">Serves:>
4
1 cup all-purpose flour
1 tsp. salt
1/2 tsp. paprika
1/2 tsp. garlic powder
1/2 tsp. cayenne pepper
1/4 tsp. black pepper
20 chicken <span class="il">wing> segments
1/2 cup butter OR margarine
1/2 cup hot sauce (I prefer Anchor Bar)
In
a shallow dish, combine flour, salt, paprika, garlic powder, and
peppers.
-Coat chicken entirely in the flour mixture; refrigerate coated
wings for 1 hour; coat chicken again with remaining flour
mixture.
-In a 2-quart saucepan, heat butter and hot sauce just until
butter melts; turn heat to
low and keep warm on stove top.
-Deep-fry chicken, 8 - 10 pieces at a time, in 375 degree
oil (vegetable oil, canola oil, or peanut oil) for 13 minutes,
turning once or twice.
-Drain chicken on a wire cooling rack for 30 seconds, then
immediately toss fried chicken in buffalo sauce mixture
and remove with a slotted spoon.
-Repeat with remaining chicken.
<p align="left"><span style="font-size: medium;">Adjusting the
spiciness of the sauce:> As is,
the recipe produces a medium sauce. To change the amount
of spiciness, simply adjust the butter-to-hot sauce-ratio:
Mild: Use 3/4 cup butter and 1/4 cup hot sauce.
Hot: Use 1/4 cup butter and 3/4 cup hot sauce.

In class we've cooked it with honey to reduce to a sweet and spicy glaze. Also blended with softened cream cheese as a filling with sushi.
On wings, the base sauce we used for our wings in the first restaurant I cooked in was softened butter and Frank's Red Hot sauce. That was our mild. For medium, hot, or nuclear, we added spicier stuff like a habanero paste, more cayenne, etc.
